Hey Joe thanks for your question. I'm not sure what you are specifically thinking about as fittings but that term is defined in Article 100 to mean "accessory". Locknuts and bushings are called fittings in 314.16(B) and the word is used in many locations in the NEC. I am not aware of a restriction of how many fittings can be used in a conduit run other than creating an installation that is not neat and workmanlike as required by 110.12.
