Question:
I had a house fire and insurance is replacing the wiring in the affected areas. However, it is knob and tube and I'm not comfortable with them tying into that system. Shouldn't the entire electrical wiring system be updated and if so is there a code that forces an update to the entire system if it is being modified?

Article 394 of the 2014 National Electrical Code(NEC) establishes minimum criteria for "Concealed Knob and Tube Wiring". The local Authority Having Jurisdiction (AHJ) may also have rules in place providing guidance on how existing wiring must be handled during a repair or renovation.
